The Pajarera variety gets its name due to the interest of all kinds of wild birds in its fruit compared to any other variety; it is an olive of large size, sweetness, and early ripening.
On the nose, we can highlight a medium-intensity ripe fruitiness. We will find aromas of nuts and ripe fruits such as overripe banana.
In the mouth, we find a smooth and very sweet oil, characteristic of the olive variety from which it comes. It has a low intensity of bitterness and spiciness. It is a non-astringent oil with a medium persistence. On the palate, it shows subtle green notes of olive leaf that quickly disappear, leaving those memories of nuts and dried fruits.
The MONTEOLIVA PAJARERO EVOO is an oil that, despite being early harvest, is very mild and balanced due to the olive variety used.
It is recommended for those looking for a fresh oil but do not yet have their palate accustomed to green oils with more spiciness and bitterness.
It is recommended to be enjoyed raw on a good toasted bread or as a dressing for fresh dishes like a salad or a good Cordoban salmorejo.
