The Extra Virgin Olive Oil MONTEOLIVA TRADICIONAL FILTRADO is a natural "coupage" of the most typical varieties from the Subbética region in Córdoba. Among them, we can highlight hojiblanco, picual, picudo, pajarero, castacabra, and some other varieties in smaller proportions.
On the nose, we can perceive a low-intensity ripe fruitiness. We will notice subtle aromas of nuts and dried fruits.
In the mouth, we find a sweet oil, with little bitterness and spiciness. It is a smooth oil, not astringent, and not very persistent. On the palate, we encounter gentle hints of dried fruits again.
The MONTEOLIVA TRADICIONAL FILTRADO EVOO is a very mild and well-balanced oil.
We have sought an oil with these characteristics so that it can be used for everything. It can be used in stews, frying, dressings, raw... Due to its properties, it doesn't alter the original taste of the foods.
Moreover, it is ideal for those who are not accustomed to oils with a stronger body and more personality that give a distinctive touch to meals.
This oil undergoes mechanical filtering to remove any possible residue of pulp and vegetation water to give it its characteristic transparent, bright golden hue and to preserve it in optimal conditions throughout the year without altering its properties and characteristics. It is a process completely free from chemical treatments.
COUPAGE CAMPAIGN 24/25
MONTEOLIVA COUPAGE extra virgin olive oil is a small selection of the first oil from the Cooperative's campaign. It consists of a natural "coupage" primarily made from the hojiblanca variety, along with other varieties such as picudo, pajarero, and castacabra in a small proportion.
This oil is green, unfiltered, and its juice is obtained from olives before reaching full maturity. On the nose, we can highlight a medium-high intensity green fruity aroma. We will find very fresh aromas of green olives, olive leaves, and tomato plant.
In the mouth, we encounter a fluid oil with slight bitterness and a medium intensity spiciness, characteristic of the hojiblanca variety. On the palate, the green notes of olive leaves are present, complemented by alloza.
It is a clean oil with a medium-high persistence. Despite being green, it is quite balanced, offering a fresh and pleasant taste. It is recommended to be used raw as a dressing for good toasted country bread or a delicious salad, as well as to add a bold touch to your favorite dishes.
HOJIBLANCO CAMPAIGN 24/25
The Hojiblanca variety is one of the most prized varieties both nationally and internationally due to its aromatic complexity.
For the production of our Hojiblanca Extra Virgin Olive Oil, an early harvest has been carried out. Specifically, our partners harvested their olives at the end of October, after carefully monitoring their optimal ripening state.
As for the tasting notes, we have a medium to high-intensity Extra Virgin Olive Oil with herbaceous aromas reminiscent of tomato plants and freshly cut grass. On the palate, it stands out for its fragrance, persistence, and hints of nuts. Additionally, it possesses a characteristic spiciness typical of this variety, starting subtly in the throat and progressively reaching the tip of the tongue.
We have a complex Extra Virgin Olive Oil with personality, ideal for palates seeking a burst of flavors. Highly recommended to be enjoyed raw in salads or as a dressing for meats and fish. It is also perfect for accompanying a good toast with oak honey, as the spiciness and intensity of our Extra Virgin Olive Oil combine perfectly with the sweetness of the honey, enhancing the different aromas and flavors.
