This is an Extra Virgin Olive Oil produced in mid-October, using native varieties from the region such as picudo, pajarero, castacabra, jardúo, alameño de Cabra, and hojiblanca.
In our natural blend, we find a clean Extra Virgin Olive Oil with a medium-high persistence. Despite being green, this EVOO is quite balanced, offering a fresh and pleasant taste on the palate.
On the nose, we can highlight a medium-high intensity of green fruitiness. You will notice very fresh aromas of green olives, olive leaves, and tomato plants.
On the palate, there are slight notes of bitterness and a medium intensity of spiciness. Subsequently, green notes of olive leaves and alloza reappear.
It is recommended to enjoy this EVOO raw, especially to add a daring touch to the dishes we like the most.
