PREMIUM PAJARERO
This is a very special variety, as it gets its name from the interest of all kinds of wild birds in its fruit. We are dealing with an olive of large size, sweetness, and early ripening. In our case, harvesting and processing are carried out in the first half of October.
On the nose, we can highlight a medium-intensity fruitiness where we will find aromas of nuts and ripe fruit like banana.
On the palate, we find a very sweet oil, typical of the variety. It has a low intensity of bitterness and spiciness. On the palate, it shows subtle green notes of olive leaf that quickly disappear, leaving memories of nuts and dried fruits.
It is recommended to enjoy this oil raw on toasted bread or as a dressing for fresh dishes like a salad or a good Cordoban salmorejo.
